  • 1 cup cherry tomatoes (halved)
  • 1 small red onion (thinly sliced)
  • 1 cup corn (sweet kernels)
  • 4 cups romaine lettuce (finely chopped)
  • 1 large bell pepper (diced)
  • 1 medium avocado (sliced)
  • 1 cup tortilla strips
  • 1 cup sour cream
  • 1/2 cup mayo
  • 2 tablespoons chipotle peppers in adobo sauce (chopped)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dill
  • 1/2 teaspoon salt
  • 2 tablespoons lime juice

Instructions

  1. Wash and chop all fresh produce: finely chop romaine lettuce, halve cherry tomatoes, slice red onion, dice bell pepper, and slice avocado.
  2. In a large mixing bowl, combine black beans, corn, cherry tomatoes, red onion, bell pepper, and avocado with the romaine lettuce; toss gently to mix.
  3. In a separate bowl, whisk together sour cream, mayo, chopped chipotle peppers in adobo sauce, garlic powder, onion powder, dill, salt, and lime juice until smooth.
  4. Pour the dressing over the salad mixture; toss gently until all ingredients are coated.
