  • 20 ounces cheese tortellini (chilled)
  • 1 ½ cups grape tomatoes (halved)
  • 1 large cucumber (diced)
  • 1 cup kalamata olives (pitted and sliced)
  • ½ red onion (diced)
  • ¾ cup feta cheese (crumbled)
  • ¼ cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 clove garlic (finely chopped)
  • ½ teaspoon oregano, dried
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in boiling salted water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare the vegetables by dicing the cucumber and red onion, halving the grape tomatoes, and slicing the olives.
  3. In a mixing bowl, whisk together olive oil, apple vinegar, minced garlic, oregano, salt, and pepper to create the dressing.
