- 20 ounces cheese tortellini (chilled)
- 1 ½ cups grape tomatoes (halved)
- 1 large cucumber (diced)
- 1 cup kalamata olives (pitted and sliced)
- ½ red onion (diced)
- ¾ cup feta cheese (crumbled)
- ¼ cup extra virgin olive oil
- 3 tablespoons red apple vinegar
- 1 clove garlic (finely chopped)
- ½ teaspoon oregano, dried
- Salt and pepper to taste
- Cook the tortellini in boiling salted water until al dente. Drain and rinse under cold water.
- While the pasta cooks, prepare the vegetables by dicing the cucumber and red onion, halving the grape tomatoes, and slicing the olives.
- In a mixing bowl, whisk together olive oil, apple vinegar, minced garlic, oregano, salt, and pepper to create the dressing.
- In a large bowl, combine cooked tortellini with vegetables and pour over dressing. Toss gently to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
