  • 1 box instant pistachio pudding
  • 1 cup club soda
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 cup sweetened flaked coconut
  • 1/2 cup chopped pecans
  • 1/2 cup whole milk (for frosting)
  • 1 container frozen whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the white cake mix and one box of pistachio pudding. Add the club soda, vegetable oil, and eggs; mix until smooth.
  3. Gently fold in the sweetened flaked coconut and chopped pecans.
  4. Pour the batter into a greased 9×13 inch baking pan and bake for about 32 minutes, or until a toothpick comes out clean.
  5. Let the cake cool completely on a rack.
