  • 5 skinless chicken thighs
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 5 tbsp sun-dried tomato pesto
  • ½ pound dried penne pasta
  • 2 ½ cups chicken stock
  • 1 cup pouring cream
  • 3 tbsp freshly grated parmesan cheese
  • 3 cups baby spinach
  • ½ cup cherry tomatoes

Instructions

  1. Cut the chicken into bite-sized pieces, then season with Italian herbs, garlic powder, salt, and pepper.
  2. Heat olive oil in a large non-stick pan over medium heat. Add minced garlic and diced onion; sauté until softened (about 2 minutes).
  3. Add the seasoned chicken and sun-dried tomato pesto to the pan. Cook until the chicken starts to brown.
  4. Pour in the chicken stock and bring to a simmer.
  5. Stir in the penne pasta, cover partially, and cook until al dente (about 10 minutes), stirring occasionally.
  6. Remove from heat; mix in pouring cream and baby spinach until wilted.
  7. Add freshly grated parmesan cheese and halved cherry tomatoes before serving.
