1 cup long-grain white rice
2 cups water
1 lb large shrimp (peeled and deveined)
1 tbsp olive oil
1 tbsp chili powder
1 tsp smoked paprika
0.5 tsp ground cumin
0.5 tsp kosher salt
1 cup diced mango
0.25 cup purple onion (finely minced)
1 tbsp green jalapeno (minced)
2 tbsp fresh green cilantro leaves (chopped)
1 tbsp fresh lime juice
0.5 cup mayonnaise
1 tbsp sriracha
1 large green avocado (sliced)
1 tbsp black sesame seeds
Instructions
Cook the rice: In a large pot, bring 2 cups of water to a boil. Add rinsed rice, cover, reduce heat to low, and simmer for 15 minutes. Let sit covered for another 5 minutes.
Prepare shrimp: Heat olive oil in a skillet over medium-high heat. Toss shrimp with chili powder, smoked paprika, ground cumin, and kosher salt until well coated.
Sear shrimp: Place seasoned shrimp in the skillet and cook for 2-3 minutes on each side until pink and slightly charred.
Make mango salsa: Combine diced mango, finely minced purple onion, minced jalapeno, chopped cilantro, and lime juice in a mixing bowl.
Prepare drizzle: Whisk together mayonnaise, sriracha, and lime juice until smooth.
Assemble: Layer cooked rice in bowls; top with charred shrimp, mango salsa, avocado slices, drizzle sauce generously, and sprinkle with black sesame seeds.
