  • 2 cucumbers (thinly sliced)
  • 2.5 cups strawberries (hulled and quartered)
  • 1/4 red onion (thinly sliced)
  • 3/4 cup feta cheese (crumbled)
  • 1/3 cup fresh mint (chopped)
  • 1/3 cup Greek yogurt
  • 3 tbsp apple cider vinegar
  • 1.5 tbsp honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  2. In a large mixing bowl, combine cucumbers, strawberries, onion, crumbled feta, mint, and red pepper flakes.
  3. In a separate bowl, whisk together Greek yogurt, apple cider vinegar, honey, olive oil, salt, and pepper until well combined.
  4. Pour the dressing over the salad mix and gently toss until evenly coated.
  5. Serve immediately or chill for about 15 minutes to enhance the flavors.
