  • 3 tablespoons avocado oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ½ red onion
  • 4 cups kale
  • 4 eggs
  • 2 tablespoons shredded parmesan cheese (optional)
  • ¼ teaspoon crushed red pepper (optional)

Instructions

  1. Heat 2 tablespoons of avocado oil in a large skillet over medium heat. Add cubed sweet potatoes, salt, garlic powder, and paprika; toss to coat.
  2. Spread the sweet potatoes in a single layer and cook undisturbed until browned and crisp (5-6 minutes). Flip and cook until all sides are crispy (10-12 minutes total), then remove from the skillet.
  3. In the same skillet, add remaining avocado oil and diced onion; cook until softened (1-2 minutes). Stir in chopped kale and remaining salt; cook until wilted (about 2 minutes).
  4. Return sweet potatoes to the skillet, toss together, and create four wells for the eggs. Crack an egg into each well, cover, and cook until whites are set (5-7 minutes).
  5. Top with parmesan cheese and crushed red pepper before serving.
