  • 1/3 cup granulated sugar
  • 1 tablespoon instant yeast
  • 1 teaspoon Diamond Crystal Kosher Salt
  • 3 large eggs
  • 1 teaspoon vanilla bean paste
  • 11 strawberries (stems removed and finely chopped)
  • 1/3 cup granulated sugar (for filling)
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • 3 ounces cream cheese (at room temperature)
  • 1/4 cup unsalted butter (at room temperature)
  • 2 cups powdered sugar
  • 2 teaspoons matcha (sifted)

Instructions

  1. In a mixing bowl, combine warm milk and yeast; let sit until frothy.
  2. In a stand mixer, cream butter and sugar. Add eggs one at a time and vanilla.
  3. Gradually mix in flour, freeze-dried strawberries, salt, and yeast mixture until combined into soft dough.
  4. Knead on a floured surface for 5 minutes; let rise in greased bowl for 90 minutes.
  5. For the filling, cook chopped strawberries with sugar and cornstarch until thickened; cool.
  6. Roll out dough into a rectangle, spread filling, then roll tightly and slice into pieces.
  7. Bake at 375°F (190°C) for about 25 minutes until golden brown; cool before frosting.
  8. For frosting, beat cream cheese with butter; add powdered sugar and matcha until smooth.
