  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup all-purpose flour

  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 6 tablespoons full-fat sour cream or plain Greek yogurt
  • 6 tablespoons buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups quartered fresh strawberries
  • 1/3 cup strawberry preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with baking liners.
  2. In a mixing bowl, beat together cream cheese and granulated sugar until smooth. Add egg yolk and vanilla extract, mixing until well combined. Set aside.
  3. In another bowl, combine flour, brown sugar, granulated sugar, and salt. Mix in melted butter until crumbly. Set aside.
  4. In a large bowl, whisk together melted butter and granulated sugar until combined. Beat in eggs one at a time. Then add sour cream, buttermilk, and vanilla extract. Mix until smooth.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold this mixture into the wet ingredients until just combined.
  6. Gently fold in quartered fresh strawberries and strawberry preserves into the muffin batter.
  7. Spoon muffin batter into prepared muffin tin until each slot is about two-thirds full. Add a dollop of cheesecake filling on top of each muffin and sprinkle with streusel topping.
