  • 1/2 cup shortening
  • 1.25 cups sugar
  • 1 egg
  • 4.25 cups all-purpose flour
  • 3/4 cup corn starch
  • 2 tsp baking powder
  • 1/2 tsp lemon zest
  • For Buttercream Frosting: 1 cup butter, 6 cups powdered sugar, 8 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together butter, shortening, and sugar until fluffy. Add the egg and mix in vanilla and almond essence.
  3. Gradually stir in flour, corn starch, baking powder, and lemon zest until smooth.
  4. Roll out dough on a floured surface to about 1/4 inch thick; cut out shapes with bunny cookie cutters and place on prepared baking sheets.
  5. Bake for about 10 minutes or until edges are lightly golden; cool before decorating.
  6. To make frosting, beat softened butter and sifted powdered sugar until creamy; gradually add vanilla essence and milk until smooth.
