  • 4 medium Russet potatoes
  • ¼ cup melted butter
  • 2 teaspoons minced garlic
  • 8 slices sharp cheddar cheese
  • 2 tablespoons chopped chives
  • Salt and pepper to taste

Instructions

  1. Preheat your smoker to 350°F (175°C).
  2. Slice each potato into about 8 thin sections without cutting all the way through. Place chopsticks alongside the potatoes to guide your cuts.
  3. Place each potato on a piece of heavy-duty aluminum foil about 14” x 12”.
  4. In a bowl, mix melted butter and minced garlic, then brush generously over the potatoes, ensuring it seeps between the slices.
  5. Wrap each potato securely in foil and smoke for approximately 40 minutes until fork-tender.
  6. Remove from the smoker, insert cheese slices between potato slices, and return to the smoker uncovered until cheese melts.
  7. Garnish with chopped chives before serving.
