  • 4 ripe kiwis
  • 1/4 cup shredded coconut
  • 810 fresh mint leaves
  • Juice and zest of 2 limes
  • 2 tablespoons honey

  1. Toast the coconut in a skillet over medium-low heat for about 3-5 minutes until lightly browned. Set aside.
  2. Cube the pineapple and spoon out the kiwi flesh before slicing into bite-sized pieces. Combine in a large mixing bowl.
  3. Roll up mint leaves, slice thinly, and add to the fruit mixture.
  4. In a separate bowl, whisk together lime juice, zest, and honey until well combined. Pour over the fruit and toss gently.
