  • ¾ cup granulated sugar
  • 2 large ripe bananas, mashed
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup Nutella (plus extra for swirls)
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, combine mashed bananas and sugar until smooth.
  4. Stir in the egg and vegetable oil into the banana mixture until well mixed.
  5. Add vanilla extract and Nutella; mix until smooth.
  6. Gradually fold the dry ingredients into the wet mixture until just combined; be careful not to overmix.
  7. If desired, gently fold in chocolate chips.
  8. Spoon the batter into muffin cups, filling each about 2/3 full. Add extra Nutella on top for swirls if you like.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Allow muffins to cool in the tin for five minutes before transferring to a wire rack.
