  • 1 lb ground chicken
  • 2 mozzarella cheese cubes (1/2" each)
  • 1/2 red onion, grated
  • 2 tbsp fresh parsley, chopped
  • 1 clove garlic, minced
  • Juice of 1/2 lemon
  • 1/2 tbsp freeze-dried basil
  • 1/2 tbsp oregano
  • 1/4 cup grated parmesan cheese
  • 1/4 tsp coarse sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, grated onion, parsley, garlic, lemon juice, herbs, parmesan cheese, salt, pepper, and red pepper flakes until well mixed.
  3. Scoop about 1.5 tablespoons of the mixture and place a mozzarella cube in the center. Form the meatball around the cheese.
  4. Place meatballs on a baking sheet with space between each one and bake for 15 minutes.
  5. Flip the meatballs and bake for an additional 15 minutes until fully cooked.
