  • Zest of 2 lemons
  • 4 teaspoons lemon juice
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 4 teaspoons cornstarch
  • 1/4 teaspoon fine sea salt
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. In a mixing bowl, beat softened butter with powdered sugar until smooth. Mix in lemon zest, lemon juice, and vanilla until well combined.
  2. Gradually add flour, cornstarch, and sea salt to the mixture on low speed until just incorporated. The dough should be slightly crumbly but hold together when pressed.
  3. Divide the dough in half and shape into two logs about 12 inches long using wax or parchment paper. Refrigerate for one hour.
  4. Preheat oven to 350°F (175°C). Slice chilled logs into 12 pieces each and place on a lined baking sheet.
