  • 2 cups all-purpose flour (spooned & leveled)
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 cup sour cream or plain Greek yogurt
  • 2 large eggs (room temperature)
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest (from ~2 lemons)
  • 2 tsp vanilla extract
  • 1½ cups fresh blueberries + 1 tbsp flour (for coating)
  • 1 cup powdered sugar (sifted)
  • 23 tbsp fresh lemon juice
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 loaf pan and line the bottom with parchment paper.
  2. In one bowl, whisk together 2 cups of flour, 2 teaspoons of baking powder, and ½ teaspoon of salt. Set aside.
  3. In another bowl, mix ½ cup vegetable oil, 1 cup granulated sugar, 1 cup sour cream (or Greek yogurt), 2 large eggs, 2 tablespoons fresh lemon juice, 1 tablespoon lemon zest, and 2 teaspoons vanilla extract until smooth.
  4. Combine the wet and dry ingredients gently until just mixed to avoid overmixing.
  5. Coat 1½ cups fresh blueberries in 1 tablespoon of flour before folding them into the batter.
  6. Pour the batter into the prepared pan and bake for 55–65 minutes or until a toothpick comes out clean.
  7. Cool for 15 minutes in the pan before glazing with a mixture of 1 cup sifted powdered sugar and 2–3 tablespoons fresh lemon juice.
