  • 3 1/2 cups shredded mozzarella cheese
  • 1 1/2 cups almond flour
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1/3 cup sliced black olives, optional
  • 1 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 2 cups shredded lettuce
  • 1 tomato, diced
  • cilantro, guacamole, jalapeños, optional additional toppings

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a microwave-safe bowl, melt mozzarella cheese until fully melted.
  3. Combine melted cheese with almond flour, egg, baking powder, and xanthan gum in a food processor; pulse until dough forms.
  4. Roll out dough between parchment paper and transfer to a pie pan.
  5. Bake the crust for 10 minutes.
  6. Brown the ground beef in a skillet; add taco seasoning and mix well.
  7. After baking the crust, layer with shredded cheese, ground beef mixture, sour cream, and top with more cheese.
  8. Bake at 375°F (190°C) for an additional 6–8 minutes until bubbly.
  9. Cool slightly before serving with desired toppings.
