  • 2 tablespoons unflavored zero carb protein powder
  • 2 tablespoons almond flour
  • 2 oz cream cheese, softened
  • 1 tablespoon sugar free sweetener
  • 1/2 teaspoon cream of tartar
  • 1/2 cup boiling water
  • 2 1/2 tablespoons powdered sugar free sweetener
  • 1/2 teaspoon konjac gum powder
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon flavor extract
  • food coloring
  • 3 tablespoons powdered sugar free sweetener
  • 1/2 teaspoon lemon juice
  • 12 tablespoons heavy whipping cream

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking tray with parchment paper.
  2. Separate egg whites and yolks into two bowls. Mix yolks with protein powder, almond flour, softened cream cheese, and sweetener until smooth.
  3. Whip egg whites with cream of tartar until stiff peaks form. Gently fold yolk mixture into egg whites.
  4. Scoop batter onto the baking tray, creating wells in the center for filling. Bake for about 12 minutes or until golden brown.
  5. For the jelly filling, combine konjac gum powder and sweetener in boiling water; stir in lemon juice and flavor extract until thickened.
  6. Once pastries cool, fill each well with jelly and prepare icing by mixing powdered sweetener, lemon juice, and heavy whipping cream.
