  • 6 jalapenos
  • 2 tbsp avocado or olive oil
  • 16 ounces Fiber Gourmet light elbow pasta
  • 1/2 cup whipped cream cheese
  • 1 1/2 cups plain Greek yogurt
  • 6 ounces cheddar cheese (shredded)
  • 1 tsp organic garlic powder
  • 1 tsp organic onion powder
  • pink salt
  • cracked black pepper

Instructions

  1. Boil salted water in a large pot.
  2. Toss jalapenos with oil and broil on a baking sheet for about 10 minutes until charred.
  3. Cook pasta until al dente according to package instructions.
  4. Drain and combine cooked pasta with whipped cream cheese in a mixing bowl.
  5. Steam broiled jalapenos in a sealed bag for 20 minutes; peel and chop them.
  6. Mix chopped jalapenos with the pasta along with Greek yogurt, spices, and cheddar cheese until well combined.
