  • 20 oz refrigerated cheese tortellini
  • 1 cucumber, peeled and sliced
  • 1 pint cherry tomatoes, halved
  • 6 oz black olives, halved
  • 1 orange bell pepper, chopped
  • 2 tablespoons chopped pepperoncini
  • 8 oz fresh mozzarella balls, quartered
  • 8 oz chopped turkey slices
  • Homemade Italian dressing

Instructions

  1. Prepare the Italian dressing according to your recipe and refrigerate until ready to use.
  2. Cook the tortellini in salted water according to package directions. Rinse with cool water and drain well.
  3. In a large bowl, combine the warm tortellini with half of the dressing and toss gently.
  4. Add cucumber, cherry tomatoes, black olives, orange bell pepper, pepperoncini, mozzarella balls, and chopped turkey slices to the bowl. Mix until well combined.
