  • ½ cup whole milk
  • 5 tablespoons unsalted butter
  • 6 tablespoons granulated sugar
  • 2 eggs
  • 2 ¼ teaspoons instant yeast
  • 4 cups bread flour
  • ¼ cup all-purpose flour
  • 1 ½ teaspoons fine sea salt

Instructions

  1. In a stand mixer bowl, combine pineapple juice, warmed milk, melted butter, sugars, eggs, and yeast. Mix well.
  2. Add all-purpose flour and 2 cups of bread flour. Stir until a rough dough forms; then add salt.
  3. Use a dough hook on medium-low speed to knead the dough for about 4 to 5 minutes while gradually adding remaining flour until smooth.
  4. Place the dough in a greased bowl, cover with plastic wrap, and let it rise until doubled (about 1.5 hours).
  5. Gently deflate the dough and divide it into 15 pieces; shape each into a ball and place in a greased baking pan.
  6. Brush with an egg-water mixture and allow to rise again until doubled (about 1 hour).
  7. Preheat oven to 375°F and bake for about 20 minutes until golden brown.
