  • 3 Poblano Peppers
  • 1 Small Sweet Onion
  • 6 Cloves of Garlic
  • 1 tsp Kosher Salt
  • 1/2 tsp Ground Coriander
  • 1/5 cups Water
  • 1 cup Apple Cider Vinegar
  • 2 tbsp Olive Oil

  1. Preheat your grill to medium heat.
  2. Drizzle olive oil over all peppers and grill them for about 12-16 minutes until charred, turning halfway through.
  3. Place the grilled peppers in a container and let them rest for 10 minutes to loosen the skins.

  5. In a medium saucepan, combine chopped peppers, garlic, onion, water, vinegar, salt, and ground coriander.
  6. Simmer the mixture over medium heat for about 45 minutes while stirring occasionally.
