  • lbs (680g) fresh salmon fillet, skinless and boneless
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 small red onion, cut into squares
  • 1 zucchini, thickly sliced into half moons
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley or cilantro, finely chopped
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili flakes (optional)
  • Lemon wedges
  • Chopped fresh herbs
  • Sesame seeds or chili flakes (optional)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Cut the salmon into 1½-inch cubes and pat dry.
  3. In a bowl, mix olive oil, lemon juice, zest, minced garlic, chopped herbs, paprika, cumin, salt, pepper, and optional chili flakes to create the marinade.
  4. Coat the salmon cubes with the marinade and refrigerate for 15–30 minutes.
  5. While marinating, cut vegetables into uniform chunks and toss with olive oil, salt, and pepper.
  6. Assemble the skewers by alternating salmon cubes and vegetable pieces.
  7. Preheat the grill or grill pan over medium-high heat. Oil the grates to prevent sticking.
  8. Grill skewers for 10–12 minutes, turning every few minutes until cooked through (internal temperature should reach 145°F/63°C).
  9. Serve garnished with lemon wedges and fresh herbs.
