  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic (minced)

Instructions

  1. Preheat the grill to high heat.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, mustard, salt, and pepper.
  3. Wash the romaine lettuce and cut it in half lengthwise; then quarter while keeping the core intact.
  4. Brush vinaigrette generously on both sides of the romaine quarters.
  5. Grill the romaine cut side down for about 2–3 minutes until charred; flip and grill for another 1½–2 minutes.
  6. Serve immediately, optionally garnished with additional toppings.
