  • 1/2 cup pineapple juice (or orange juice)
  • 1/3 cup yellow mustard
  • 1/4 cup honey
  • 2 large red bell peppers (diced)

  • 1 heaping teaspoon chili powder
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 1/4 teaspoon garlic powder
  • Wooden skewers (soaked for at least 20 minutes prior to grilling)
  • 1 to 2 tablespoons olive oil (optional)

Instructions

  1. In a mixing bowl, combine pineapple juice, yellow mustard, honey, chili powder, salt, pepper, and garlic powder. Add diced chicken and toss to coat. Cover and marinate in the refrigerator for at least 15 minutes.
