Grilled Chicken Pasta Salad is a refreshing and vibrant dish that combines tender grilled chicken with al dente pasta and a medley of fresh vegetables. Tossed in a light, creamy dressing, this salad is perfect for summer barbecues, picnics, or quick weeknight dinners.

  • 23 boneless, skinless chicken breasts
  • 4 cups uncooked pasta
  • Handful chopped cilantro
  • 1/4 medium red onion, chopped
  • 1 cup grated smoked cheddar
  • 1 avocado, chopped
  • 1/4 cup olive oil
  • Juice from 1/2 lemon
  • 2 dashes Italian seasoning
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon BBQ sauce
  • 1/2 tablespoon vinegar
  • 1/2 tablespoon brown sugar
  • Pinch of garlic powder

Instructions

  1. Marinate chicken in BBQ sauce for 30 minutes in a Ziploc bag.
  2. Mix dressing ingredients in a bowl and set aside.
  3. Cook pasta in salted boiling water until al dente; drain and rinse.
  4. Grill marinated chicken for about 4 minutes on each side until cooked through.
  5. In a large bowl, combine pasta with cilantro, onion, cheese, avocado, and dressing.
  6. Slice grilled chicken and serve on top of the salad.
