  • 3 finely minced garlic cloves
  • 1 teaspoon dried garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ¼ teaspoon coarse black pepper
  • ½ teaspoon plus a pinch of sea salt
  • Drizzle of olive oil for cooking
  • ¼ cup crumbled dry-type feta cheese
  • ¼ cup fresh chopped parsley

Instructions

  1. In a large mixing bowl, combine lemon zest and juice, olive oil, minced garlic (or garlic powder), dried oregano, smoked paprika, black pepper, and sea salt. Reserve ¼ cup marinade.
  2. Toss chicken in the remaining marinade until well coated. Cover and refrigerate for 30–60 minutes.
  3. Heat a nonstick skillet over medium-high heat with olive oil. Sear chicken until golden brown on one side; flip and cook for another 3–4 minutes until fully cooked (internal temperature should reach 165°F).
  4. Serve the cooked chicken drizzled with reserved marinade, topped with feta cheese and parsley, garnished with lemon wedges.
