  • 8 ounces short-cut pasta (Radiatore, Elbows, or Cellentani)
  • 1 cup diced red bell pepper
  • 3/4 cup diced celery
  • 1/3 cup diced red onion
  • 1 cup matchstick carrots
  • 1 Tablespoon fresh parsley, minced
  • 1/2 cup mayonnaise (full fat or avocado oil mayo)
  • 1/2 cup fat free Greek yogurt (I use vanilla)
  • 1 Tablespoon red apple vinegar
  • 2 teaspoons spicy brown mustard
  • 3 teaspoons raw honey
  • 1 clove roasted garlic, smashed
  • 1 teaspoon fresh-cracked black pepper

Instructions

  1. In a bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, mustard, honey, smashed garlic, and black pepper. Chill the dressing.
  2. Boil salted water in a large pot; cook the pasta until al dente. Drain and let cool.
  3. In a large mixing bowl, combine the cooled pasta with bell pepper, celery, red onion, hard-boiled eggs, carrots, and half the parsley.
  4. Drizzle dressing over the salad mixture gradually while stirring until well combined. Add remaining parsley before serving.
