  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons light brown sugar, packed (optional, for extra moisture)
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable or canola oil
  • 2 large eggs, at room temperature
  • ¾ cup buttermilk, at room temperature
  • 1 ½ teaspoons vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Prepare strawberries: Toss diced strawberries with granulated sugar; let sit for 10-15 minutes to release juices, then drain and coat with flour.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, mix together granulated sugar, melted butter, vegetable oil, eggs, buttermilk, and vanilla until smooth.
  5. Combine wet and dry ingredients gently until just mixed; fold in floured strawberries.
  6. Pour batter into the prepared pan and bake for 55-65 minutes or until a skewer comes out with moist crumbs.
