  • 1/2 cup brown sugar (or coconut sugar)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup grated carrots
  • 1/2 cup applesauce (or yogurt)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • Optional: 1/4 cup walnuts or raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add grated carrots, applesauce (or yogurt), vegetable oil (or melted coconut oil), and vanilla extract to the dry mixture. Stir until well combined.
  4. Fold in walnuts or raisins if desired.
  5. Grease or line a muffin tin and fill each muffin cup about three-quarters full with batter.
  6. Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
