- 6 hard-boiled eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, diced
- 2 celery ribs, chopped
- Fresh chives for garnish
- Paprika for garnish
- Cook the macaroni in boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
- Halve the hard-boiled eggs, remove yolks, and chop the whites into small pieces.
- Mash egg yolks in a bowl and mix with Greek yogurt, mayonnaise, and Dijon mustard until smooth.
- Combine chopped egg whites, red onion, celery, and the egg yolk mixture in a large bowl; stir until well mixed.
- Season with paprika and sea salt to taste, then chill in the refrigerator for at least one hour before serving.
