  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, diced
  • 2 celery ribs, chopped
  • Fresh chives for garnish
  • Paprika for garnish

Instructions

  1. Cook the macaroni in boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Halve the hard-boiled eggs, remove yolks, and chop the whites into small pieces.
  3. Mash egg yolks in a bowl and mix with Greek yogurt, mayonnaise, and Dijon mustard until smooth.
  4. Combine chopped egg whites, red onion, celery, and the egg yolk mixture in a large bowl; stir until well mixed.
  5. Season with paprika and sea salt to taste, then chill in the refrigerator for at least one hour before serving.
