  • 2 cups red cabbage
  • 1 can black beans
  • 1 cup fire-roasted corn
  • 1 medium red bell pepper
  • 1 medium avocado (add just before serving)
  • 1/2 cup feta cheese or crumbled queso fresco (or omit)
  • 1/4 cup fresh cilantro (omit if not preferred)
  • 1 cup tortilla chips (optional)
  • 1/2 cup avocado oil (or olive oil)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 teaspoon chipotle chili powder
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a mixing bowl, coat chicken thighs with olive oil and taco seasoning.
  2. Cook the seasoned chicken in a grill pan over medium-high heat for about 5-7 minutes on each side until fully cooked. Let cool before slicing.
  3. Chop red cabbage, red bell pepper, and avocado. Combine these in a large bowl with black beans and corn.
