  • 1 oz unsalted butter
  • 250 g granulated sugar
  • 90 g Dutch cocoa powder
  • 2 oz vegetable oil
  • 1 oz light corn syrup
  • 1 tablespoon pure vanilla extract
  • 1 large egg yolk
  • 1 large egg, at room temperature
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 60 g all-purpose flour
  • 2 oz chocolate chips
  • 12 oz quality chocolate for ganache
  • 6 oz heavy whipping cream for ganache
  • 1 tablespoon butter for ganache
  • Rainbow candy-coated chips for decoration

Instructions

  1. Preheat your oven to 350°F (180°C). Line a 9×13 inch baking pan with foil and grease it.
  2. In a large pot over medium heat, combine water, butter, sugar, corn syrup, and cocoa powder. Cook for about 2-3 minutes until smooth; let cool for about 5 minutes.
  3. Whisk in vegetable oil, vanilla extract, egg yolk, and egg until fully combined.
  4. Stir in baking soda, salt, cornstarch; gently fold in flour and chocolate chips until just combined.
  5. Pour batter into the prepared pan and bake for about 14-18 minutes. Check doneness with a toothpick; it should come out with moist crumbs.
  6. Allow cooling completely before topping with ganache made from heating chocolate and cream together until smooth.
