  • 2 lbs chicken breast
  • 1 lb mushrooms
  • 1 onion
  • 4 garlic cloves
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the chicken into bite-sized pieces, slice the mushrooms, chop the onion, and mince the garlic.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Cook the chicken until browned (6-8 minutes), then transfer to a baking dish.
  3. In the same skillet, melt another 2 tablespoons of butter. Sauté mushrooms, onion, garlic, salt, and pepper until softened (8-10 minutes).
  4. Stir in flour; cook for 1 minute. Gradually add chicken broth and cream while stirring until thickened (3-5 minutes). Add thyme; season to taste.
  5. Pour sauce over chicken; top with cheddar cheese and breadcrumbs. Bake for 25-30 minutes until bubbly and golden.
