  • 2 cups broccoli florets
  • 3 tbsp soy sauce
  • 1 cup chicken broth (divided)
  • 2 cloves garlic (finely chopped)
  • 2 tsp ginger (finely chopped)
  • 2 tsp sugar
  • 2 tsp cornstarch (divided)
  • Cooking spray

Instructions

  1. In a small bowl, mix soy sauce, 3/4 cup chicken broth, sugar, and 2 teaspoons cornstarch until smooth.
  2. Heat a nonstick skillet over medium-high heat and spray with cooking spray. Add chicken, garlic, and ginger; stir-fry until browned (2-3 minutes).
  3. Pour the sauce mixture over chicken; stir well to coat. Lower heat, cover, and simmer for about 5 minutes.
  4. Add broccoli to the skillet; stir to coat in sauce. Cover and cook another 5 minutes until broccoli is tender.
  5. Mix remaining broth with remaining cornstarch to create a slurry; pour into skillet while stirring until the sauce thickens (1-2 minutes).
  6. Remove from heat and serve hot over rice or noodles.
