  • 3 TBSP White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 cup Finely grated carrots (Make sure to grate them fresh. Don't use pre-shredded)
  • 2 Large egg yolks (room temperature)
  • 2 oz Cream cheese (room temperature)
  • 2 TBSP Unsalted butter (room temperature)
  • 3/4 cup Powdered sugar (sifted)
  • 1 tsp Pure vanilla extract

Instructions

  1. Prepare the cream cheese filling by mixing cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth. Refrigerate.
  2. Combine dry ingredients: whisk together flour, baking soda, salt, cinnamon, and nutmeg in one bowl.
  3. In a separate bowl, beat melted butter with brown and white sugars, egg yolks, and vanilla until well blended; gradually mix in dry ingredients.
  4. Fold in grated carrots until evenly distributed.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop dough onto baking sheets; add cream cheese filling on half and top with another scoop of dough.
  7. Bake for about 15 minutes or until edges are lightly golden; cool before serving.
