  • 1 1/4 cups cold unsalted butter, diced
  • 5 cups peeled, pitted, and chopped peaches (about 7 to 8 medium peaches, 2.5 lb)
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 6 tbsp heavy cream
  • 1/2 tsp vanilla extract (optional)
  • Reserved crumb mixture from crust
  • 1/4 cup packed brown sugar (preferably dark)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly.
  3. Press two-thirds of the mixture into a greased 9×13 inch baking dish and bake for about 15 minutes until lightly golden.
  4. In another bowl, mix chopped peaches, sugar, flour, cinnamon, salt, heavy cream, and optional vanilla until well combined.
  5. Spread peach filling over the crust; sprinkle reserved crumble mixture on top along with brown sugar.
  6. Bake for an additional 45-50 minutes until the topping is golden brown.
  7. Cool completely before cutting into squares.
