  • 1 cup mashed bananas (about 2 large ripe bananas)
  • 1 1/4 cups sour cream
  • 1/2 cup walnuts (chopped)
  • 8 ounces cream cheese (softened)
  • 1/2 cup semi-sweet chocolate chips (optional)
  • 1/2 cup brown sugar, packed
  • 1 tablespoon cinnamon
  • 4 tablespoons cold butter, cubed
  • 1 1/4 teaspoons baking powder
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 large eggs (at room temperature)
  • 1 tablespoon vanilla extract
  • Mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an angel food cake pan by greasing it.
  2. In a food processor, pulse walnuts for the streusel topping and mix with flour, brown sugar, cinnamon, and cold butter until crumbly. Chill.
  3. In a mixing bowl, whisk together dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
  4. Beat softened butter and sugar until fluffy; add eggs one at a time, followed by vanilla extract and mashed bananas.
  5. Gradually add dry ingredients and sour cream to the banana mixture until just combined. Fold in chocolate chips and chopped walnuts.
  6. Pour half the batter into the prepared pan; layer with cream cheese filling made from reserved batter mixed with softened cream cheese and sugar.
  7. Top with remaining batter and sprinkle streusel over it before baking for about 55-60 minutes.
  8. Let cool before removing from the pan; drizzle with vanilla glaze if desired.
