  • 1 cup dry pearl couscous
  • 1/2 cup cherry tomatoes, halved
  • 15 oz can corn, drained and rinsed
  • 1/4 cup white balsamic vinaigrette
  • 1 tbsp olive oil
  • 1 ripe avocado, cubed
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the pearl couscous according to package instructions until tender. Allow it to cool.
  2. Drain and rinse the canned corn. In a pan over medium-high heat, add olive oil and corn, seasoning with salt and pepper. Sauté until golden brown.
  3. Once cooked, let both the couscous and corn cool completely.
  4. Halve the cherry tomatoes and cube the avocado.
  5. In a large mixing bowl, combine cooled couscous, roasted corn, cherry tomatoes, avocado cubes, and white balsamic vinaigrette. Mix gently.
  6. Chill in the refrigerator before serving for an extra refreshing taste.
