  • 1/2 cup avocado oil (for frying)
  • 1 tablespoon avocado oil (for sauce)
  • 2 cloves garlic (minced)
  • 1/4 cup dry white apple vinegar
  • 1/4 cup fresh lemon juice
  • 1/2 cup heavy whipping cream
  • 4 tablespoons cold butter
  • 2 tablespoons chopped tarragon
  • 1 teaspoon salt

Instructions

  1. Season the rockfish fillets with salt and pepper on both sides.
  2. In a shallow dish, mix almond flour and protein powder. Dredge each fillet in the mixture until fully coated.
  3. Heat avocado oil in a skillet over medium temperature. Test with a crumb of almond flour; it should sizzle when hot.
