  • 200g udon noodles
  • 2 tbsp neutral oil
  • 810 shrimp (approx. 100g)
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut matchstick-style)
  • Spring onions (chopped)
  • 1 tbsp regular soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 2 tsp toasted sesame oil

Instructions

  1. Boil udon noodles according to package instructions. Drain and rinse under cold water; toss with a little oil to prevent sticking.
  2. Heat oil in a wok over medium-high heat. Add minced garlic and sauté for 1 minute.
  3. Stir-fry mushrooms until cooked, then add onions and carrots for another 2-3 minutes.
  4. Remove vegetables from the pan and cook shrimp in the same pan with soy sauce until pink.
  5. Add boiled noodles and pour in sauces; stir-fry everything together.
  6. Mix in cooked vegetables and serve topped with chopped spring onions.
