  • 270 ml coconut milk
  • 150 g powdered sugar
  • 8 g cornstarch
  • 90 g unsweetened shredded coconut
  • ½ tsp vanilla extract
  • 90 g almonds (toasted and chopped in small pieces)
  • 170 g white chocolate
  • 60 ml whipping cream
  • 226 g butter (cut in cubes)
  • 210 g powdered sugar (sifted)
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 186 g coconut (shredded or desiccated)
  • white chocolate bar (grated or shavings)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8-inch round baking pans.
  2. In a bowl, mix milk and vinegar; let it thicken for about 5 minutes.
  3. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  4. In a large bowl, combine cane sugar and vegetable oil. Add vanilla extract and the prepared milk mixture; mix until combined.
  5. Gradually add dry ingredients to the wet mixture; stir gently until just combined.
  6. Divide batter between pans and bake for 30–35 minutes until golden brown. Cool completely on racks.
  7. For the coconut filling, blend coconut milk, powdered sugar, cornstarch, shredded coconut, and vanilla extract until smooth; fold in toasted almonds.
  8. Prepare white chocolate buttercream by melting white chocolate with whipping cream; beat butter separately before combining with powdered sugar and melted chocolate until fluffy.
  9. Assemble by layering cake with coconut filling then frosting with buttercream.
  10. Decorate with shredded coconut and white chocolate shavings.
