Ingredients

  • 1/4 head of red cabbage
  • 1 carrot
  • 4 kale leaves
  • 1/2 shallot or 1/4 red onion
  • 1/4 pomegranate (seeds only)
  • 1/2 lemon (juice only)
  • 1 tbsp pomegranate molasses
  • 4 tbsp olive oil
  • Salt to taste

Instructions

  1. Thinly slice the cabbage and shallot. Grate the carrot. Remove the rib from the kale leaves, slice them thinly, then scrunch them to soften.
  2. Extract seeds from the pomegranate and combine all salad ingredients in a bowl.
  3. In a mason jar, mix lemon juice, pomegranate molasses, Dijon mustard, olive oil, and salt. Shake well to combine.
  4. Dress the salad just before serving and toss gently to evenly coat.
