  • 1½ cups cooked cannellini or butter beans
  • 2 tbsp extra virgin olive oil
  • 2 medium carrots, diced
  • 1 cup celery, diced
  • 1 cup red onion, diced
  • 34 cloves garlic, minced
  • 2 bay leaves
  • 2 tsp fresh thyme leaves
  • 8 cups vegetable or chicken stock
  • 1 medium sweet potato, diced
  • 1 (14.5 oz) can diced tomatoes with juice
  • ½ cup uncooked quinoa
  • 2 cups chopped kale
  • Sea salt and freshly ground pepper to taste

Instructions

  1. If using dry beans, soak overnight or quick-soak by boiling for three minutes and letting sit for one hour. Drain.
  2. Simmer soaked beans in eight cups of water until tender (about 45 minutes to 1½ hours). Keep the cooking liquid.
  3. In a skillet, heat olive oil over medium heat. Sauté carrots, celery, red onion, garlic, bay leaves, and thyme for about eight minutes.
  4. Transfer sautéed vegetables to bean cooking liquid along with cooked beans.
  5. Add celeriac cubes, diced sweet potatoes, canned tomatoes, and uncooked quinoa to the pot. Bring to a boil then reduce heat to simmer for about twenty minutes.
  6. Once done simmering, season with salt and pepper to taste. Stir in chopped kale and cook until wilted (5-8 minutes).
  7. Serve hot with optional garnish of grated Parmesan cheese.
