Wholesome Crockpot Beef Stew is a comforting and easy meal that practically cooks itself. Perfect for busy weeknights, this hearty stew features tender beef simmered with an array of colorful vegetables, all enhanced by rich flavors from aromatic herbs and spices.

  • 2 ½ pounds stew meat
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt
  • ¼ cup flour
  • 36 tablespoons olive oil
  • 2 cups chopped yellow onions
  • 4 minced garlic cloves
  • 1/4 cup apple vinegar
  • 4 cups beef stock
  • 2 beef bouillon cubes
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons tomato concentrate
  • 5 medium carrots, chopped into 1-inch pieces
  • 1 pound baby Yukon gold potatoes, halved or quartered
  • 2 bay leaves
  • 1 rosemary sprig
  • 1 cup frozen peas
  • ¼ cup cold water mixed with 3 tablespoons corn starch (optional)

Instructions

  1. Season the stew meat with black pepper, garlic salt, and celery salt; dust lightly with flour.
  2. In a skillet over medium-high heat, sear the seasoned beef in olive oil until browned.
  3. Transfer seared beef to the crockpot and add onions, garlic, vinegar, beef stock, bouillon cubes, Worcestershire sauce, tomato concentrate, carrots, potatoes, bay leaves, and rosemary.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until meat is tender.
  5. For a thicker stew (optional), mix cold water with cornstarch during the last hour of cooking.
  6. Add frozen peas in the final minutes of cooking; remove bay leaves and rosemary before serving.
