  • 3 tablespoons butter
  • 1 yellow onion, diced
  • 1 large jalapeno pepper, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 8 oz. cream cheese
  • 2 (15.5 oz.) cans cannellini beans
  • 1 (15.25 oz.) can sweet corn
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon mustard powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 pinch red pepper flakes

Instructions

  1. Combine all seasonings in a small bowl.
  2. In a large pot over medium heat, melt butter and sauté onions and jalapenos until softened.
  3. Add minced garlic and cook for an additional minute.
  4. Sprinkle flour over vegetables; cook for two minutes.
  5. Gradually add chicken broth while stirring; then incorporate half and half.
  6. Blend part of the beans with broth for thickness (optional).
  7. Add seasonings and green chilies; bring to a boil then simmer uncovered for 15 minutes.
  8. Season chicken breasts with salt and pepper; add to the pot with corn and simmer for another 15–20 minutes.
  9. Shred cooked chicken before returning it to the pot; stir in softened cream cheese until melted.
