  • 1 tbsp (15 ml) olive oil
  • ½ medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 ½ cups frozen mixed vegetables
  • 1 ½ cups (300 g) uncooked white long-grain rice, rinsed
  • ½ tsp ground turmeric
  • 3 cups (720 ml) vegetable stock
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3 minutes until softened. Stir in minced garlic and cook for another 30 seconds until fragrant.
  2. Add frozen mixed vegetables to the pan and cook for 1–2 minutes until they start to thaw. Stir in rinsed rice and ground turmeric until well coated.
  3. Pour in vegetable stock, season with salt and black pepper, then mix thoroughly. Bring to a boil, cover, reduce heat to low, and simmer for 12 minutes.
  4. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
