  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth
  • 1/3 cup dairy-free cream
  • 1/2 tsp dried marjoram
  • 1 pinch of nutmeg
  • Salt and pepper (to taste)

Instructions

  1. In a large pot over medium heat, sauté the diced onion in oil until translucent (about 3 minutes). Add minced garlic and sauté for another minute.
  2. Add diced celery, carrots, chopped potatoes, and spices; stir well.
  3. Pour in vegetable broth; bring to a boil.
  4. Reduce heat to low and simmer for about 20 minutes until veggies are softened.
  5. Blend half of the soup until smooth using an immersion blender; return blended soup to pot.
  6. Stir in dairy-free cream and simmer for a few more minutes before serving.
