  • 45 apples (of choice, cored)
  • 3 tablespoons (40g) granulated sugar (brown sugar or coconut sugar)
  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan.
  2. In a mixing bowl, combine flour and sugar. Add chilled vegan butter and mix until crumbly. Gradually incorporate cold water to form dough.
  3. Roll out the dough on a floured surface and press it into the tart pan.
  4. Slice apples thinly, toss with sugar and cinnamon, then layer them in the crust.
  5. Bake for about 70 minutes until apples are tender.
  6. Brush melted vegan butter mixed with apricot jam over the baked tart for glaze.
