  • 2 cups all-purpose flour, spoon and leveled
  • 1/2 cup cake flour, spoon and leveled
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces good quality semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • sea salt, optional

Instructions

  1. Preheat your oven to 400°F (200°C). Line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer or using a hand mixer, cream cold butter and sugars until light and fluffy.
  4. Add the egg and vanilla extract; mix until well combined.
  5. Gradually incorporate the dry ingredients along with chopped chocolate, chocolate chips, and walnuts until just combined.
  6. Scoop dough into large portions (about ½ cup each) on prepared cookie sheets. Press extra chocolate chips on top if desired.
  7. Bake for 12 to 13 minutes until edges are golden brown but centers are soft.
  8. Cool on cookie sheets for five minutes before transferring to a wire rack.
